Healthy freezer breakfast sandwiches made with eggs, ham, cheese and served on an english muffin. An easy and tasty alternative to the drive thru!

4 sandwiches

Ingredients

  • 6 eggs
  • ¼ cup milk
  • salt & pepper
  • 4 slices cheese
  • 4 slices ham
  • 4 english muffins

Instructions

  • Prepare- Heat oven to 375°F. Spray a 8 x 8 inch baking dish with spray oil and set aside.

  • Mix- In a large bowl, beat the eggs and milk together. Fold in the spinach, broccoli, salt and feta. Pour the egg mixture into the baking dish.

  • Bake- Bake for 20-25 minutes or until cooked through (center should not jiggle).

  • Cool- Allow to cool completely, then cut into 4 circles (using a glass or measuring cup) or into 4 squares.

  • Assemble- Assemble the sandwiches: one serving of egg with a slice of cheese and ham between the english muffin.

Tips:

Storage

Wrap each sandwich in a small ziplock bag, and store in the fridge (up to 4 days) or in the freezer (up to 3 months)

Reheating

Thaw overnight in the fridge (if frozen).

Heat in the microwave for 30 seconds to heat through.

Crisp up in the frying pan or on a sandwich press.

    My wife and I have been looking for ways to get our kids to eat healthier meals all around the clock.       I have thawed in the microwave but it's kind of a pain. I just do low heat and flip it often until the middle is thawed.

    These don't save time. You've just moved the work to a different time. I'm busy 24/7. I want something healthy that's pretty much ready to go. Microwaving is fine, but I ain't turnin' on no oven.

      LOL! I seriously love the way you think! I am NOT turning the oven on on a weekday morning (or weekend, who am I kidding). These recipes do save you time in the morning but you do have to put in the effort ahead of time. If you are looking for the most ridiculously easy breakfast on the list, go for the overnight oats 😉
